Pam's Prize Winning Chili Recipe

Pam Pather won first prize in the Chili Cook-Off off organized by the Anatolia Neighborhood Watch Group, year end party.

She is a mother of 3 sons and is a professional nurse. Despite her busy schedule and long hours, Pam still finds the time to cook and entertain. She enjoys trying new dishes. Chili is a new dish for Pam so it is tremendous that she won first place for her Chili. Here is her recipe


Pam's Chili Recipe

INGREDIENTS

  • 2 medium onions finely chopped
  • ¼ cup olive oil
  • 1 can pinto beans-581grams
  • 1 can-793grams crushed tomatoes
  • ¼lb ground meat, beef or lamb

Spices

  1. 2 heaped tsp. red chili powder
  2. ¼ tsp. tumeric powder
  3. 3 green chilli/jalapeno peppers
  4. ½ tsp. fennel seeds
  5. ¼ tsp. cumin seeds
  6. 1 tsp. ginger & garlic paste
  7. 5 sprigs mint
  8. ¼ cup cilantro
  9. salt to taste

METHOD

  • On med. heat sauté onion, chopped green chillies, ginger, garlic, cumin & fennel seeds
  • Then add chilli & tumeric powders. Allow to cook for about 5 min.
  • Add crushed tomato, pinto beans & ground meat. cook for 20 mins.
  • Allow to simmer for another 5 min.
  • Remove from cook top. Garnish with rest of cilantro
  • Enjoy, ideally with Naan Bread
