Easy Chili and Soy Recipes

Vegetarian/Vegan Chili

Here is a vegetarian/vegan version of chili which is also a new dish for me. It is very similar to making a curry as many of the ingredients are common to both. I enjoyed making this dish which is really a nourishing meal. Beans and other lentils that are used are rich in protein and fiber.


INGREDIENTS

  • ½ cup each, canned chick peas & frozen corn
  • 2 cups roughly chopped onion
  • 1½ cups chopped tomato
  • 1 yellow zuchini
  • 1 carrot cut in ½" pieces
  • 1 (15 oz.) can each , red kidney beans, white kidney beans & pinto beans
  • 3 cups canned crushed tomatoes
  • 1 green & 1 red small bell peppers cut in 1" squares
  • 2-4 cups water, 2 tsps. salt
  • 6 tblsp. oil (canola or olive)
  • 1 tblsp. coriander leaves
  • 2 tblsp.butter/vegan butter

Burger Ingredients & Method

  • 2 vegetarian patties such as gardenburger
  • ½ cup sliced onion
  • 1 tsp. crushed garlic
  • ½ tsp. chili & 1 tsp. coriander powders
  • salt to taste
  • 2 tblsps. olive oil
  • 1 tblsp. crushed tomato

Sauté Patties

  • Thaw patties:heat oil on medium setting, add onion & garlic
  • When soft add crushed tomato. Stir, add spices, mix well, add patties
  • Sauté on low heat until well blended with mix. Turn to cook other side.

Spices

  1. 3 tsps. each, chili & coriander powders
  2. 1 tsp. each,cumin & fennel powders &
  3. 1 tsp. crushed black pepper & 3 peppercorns
  4. 3 tsps. crushed garlic
  5. 2 whole jalapeno peppers

METHOD

  • Heat oil on medium to high temperature in a large pot. Add onion & garlic, When soft add tomato & crushed tomatoes. Stir contents. Add all spices & blend
  • Add carrots, all the lentils, beans, 2 cups water, & cook for about 5 min. Lower heat & cook for another 5 min.
  • Mash burger & add to pot. When carrot feels al denté add zuchini, bell peppers & frozen corn. Cook another 10 min. on medium to low heat. Add salt & more water. Adjust to suit your taste.
  • The peppers & zuchini should be soft yet retain their shape. Add butter/vegan butter, crushed black pepper & coriander leaves as garnish. Serve with warm rolls or bread

The ingredients in this recipe may be purchased at regular supermarkets, Indian & Asian grocery stores. The spices are generally fresher and cheaper at the Indian & Asian grocers
